Gluten-free freeze dried survival food is now available for those who see the benefits of long-term food storage but have digestive or health issues concerning gluten. If you or a family member are gluten intolerant or have celiac disease, ingredients without gluten and certified gluten-free (GF) prepared foods are a necessity.
One of the best sources I’ve found so far for celiac-safe, gluten-free survival food is the Gluten Free Package by FoodInsurance. For about $649, you can buy a three-month food supply for one adult (feeds two adults for 6 weeks). They produce quality meals — including dinner entrees of vegetable soup, potato soup, and chili — to ensure you will enjoy the food and get you money’s worth.
While other freeze dried foods would be gluten-free in themselves, such as freeze dried peas, freeze-dried strawberries and other items that don’t contain gluten in their natural state, factory processing often introduces them to trace amounts of gluten via the machines that also process wheat products. Thus, unless an item specifically states that it is gluten-free, those with severe allergies will need to assume that the food has trace amounts of gluten.
Other gluten-free (but not freeze dried) survival foods abound, with the caveat that peppers need to check labels as carefully as they always do to ensure the foods they buy for long-term storage will agree with their gut when the time comes to eat them. As for non-celiacs, the best advice is to eat what you store and store what you eat.
If your gluten intolerance is mild, you may be able to stock a variety of items that while not certified celiac-safe are indeed completely or nearly sans gluten. For example, steel cut oats are typically gluten free because they are usually processed using different equipment than wheat grains. Rolled oats, however, unless made especially to be gluten-free, are often thoroughly “contaminated” with gluten residue due to processing on the same machines that handles wheat.
